About Andalusia’s MICHELIN stars: the back story
The MICHELIN Guide Spain 2026, revealed in Málaga on 25 November 2025, gives Andalusia thirty starred restaurants: two with three stars, four with two and twenty-four with one. Five are new this year, in five different provinces.
Three stars
Aponiente, Ángel León’s restaurant in a tidal mill at El Puerto de Santa María, cooks almost entirely from the sea. Noor, in Córdoba, is Paco Morales’s exploration of Andalusia’s Moorish kitchen, reimagined season by season.
Two stars
Alevante (Chiclana), LÚ Cocina y Alma (Jerez) and Bardal (Ronda) hold two stars, as does Skina in Marbella, which you will find in our Marbella guide.
Five Andalusian provinces gained a new MICHELIN star in the 2026 guide: Cádiz, Córdoba, Granada, Málaga and Seville (MICHELIN Guide).
New this year
Mare in Cádiz, ReComiendo in Córdoba, Faralá in Granada, Palodú in Málaga and Ochando in Los Rosales, north of Seville, all won their first star. Jaén, a province of olive oil, now has five starred restaurants.
Tapas and taverns
Andalusia is just as good at the other end of the scale. Old taverns, market bars and seafood houses on the beach at Sanlúcar are part of the trip: in our lists, look for “Every budget”.
Booking
Book starred restaurants through their own websites, well ahead for weekends. Many close one or two days a week, and some for part of the winter: check before you travel.
Our advice: plan one starred lunch, rather than dinner, in summer. It is cooler, and the menus are often the same.
